Grandmother Hazen’s Company Casserole

Donna Clark: Cleveland, GA

This recipe is over 75 years old. My Grandmother would cook this for us when we would come visit. When she passed, we were afraid it was lost as it was a recipe she cut out of a newspaper. Then one day, I was looking through an old cookbook I got from her and THERE IT WAS!! My sister and I were so happy!!

The photo below is a copy of the recipe with her alterations.

  • 2 pounds ground beef
  • 1 package noodles (8 ounces)
  • ½ cup chopped onion
  • ¼ cup chopped green pepper
  • 1 tbsp lard or drippings
  • 1 tsp salt
  • 1/8 tsp pepper
  • 3 cans tomato sauce (8 ounces)
  • 1 can (8 ounce) mushrooms
  • 1 (8 ounce) cream cheese
  • 1/3 cup milk
  • 2 tsp lemon juice
  • ¼ tsp garlic salt
  • 1 tsp Worcestershire sauce
  • 1 cup sour cream
  • Shredded cheddar cheese for topping
Instructions:

  1. Cook noodles according to directions on package.
  2. Brown ground beef, onions, and green pepper in lard or drippings. Pour off drippings.
  3. Add salt, pepper, tomato sauce, mushrooms, and liquid to meat mixture.
  4. In a separate bowl, combine the cream cheese, milk, lemon juice, garlic salt, and Worcestershire sauce and mix until smooth.
  5. Add the noodles to the cream cheese mixture.
