This recipe has been a cherished family favorite for years! It’s one of the most requested dishes I bring to family brunches, breakfast gatherings, showers, and afternoon teas. Whenever out-of-town relatives come to visit, I make this bread as a parting gift for their journey home. It’s become a sweet tradition, and maybe even a little incentive, for them to come back again soon. The comforting aroma and familiar taste always bring smiles and memories, making it more than just a recipe. It’s a little piece of my home to them.

Ingredients:
 
  • 3 ¼ cups all-purpose flour
  • 1 ½ tsp salt
  • 1tsp ground nutmeg
  • 2 tsp of baking soda
  • 1 tsp ground cinnamon
  • 3 cups of sugar
  • 1 cup olive oil
  • 4 eggs, beaten
  • 2/3 cup of water
  • 2 cups grated zucchini
  • 1 tsp lemon juice
  • 1 cup chopped walnuts or pecans
  • 1 cup chocolate chip morsels
Instructions:
 
  1. Preheat oven to 350 degrees. 
  2. Mix dry ingredients except for the nuts and chocolate chips in a large bowl. 
  3. In a separate bowl, mix wet ingredients, then fold into dry ingredients.
  4. Add nuts and chocolate chips.
  5. Bake in two loaf pans for 1 hour or until done.
